  • 1 cup Pumpkin Puree

  • 0.5 cup Unsalted Butter, melted
  • 2 large Eggs, room temperature
  • 1 teaspoon Vanilla Extract
  • 1.5 teaspoons Pumpkin Pie Spice
  • 1 tablespoon Butter (for greasing pot)
  • 0.5 cup Granulated Sugar (for coating)
  • 1 tablespoon Ground Cinnamon (for coating)

Instructions

  1. Cut a circle of parchment paper to fit the bottom of a 4-quart slow cooker insert. Place it in the bottom and rub 1 tablespoon of melted butter over the parchment to prevent sticking.
  2. In a medium mixing bowl, whisk together the flour, baking powder, baking soda, salt, and pumpkin pie spice until no lumps remain.
  3. In a separate bowl, whisk the melted butter, sugar, eggs, vanilla extract, and pumpkin puree until smooth and fully combined.
  4. Pour the wet ingredients into the dry ingredients. Gently fold them together with a fork or spatula until the flour just disappears. Do not overmix.
  5. Using an ice cream scoop or tablespoon, drop balls of batter onto the prepared slow cooker insert, leaving about an inch of space between each. You should get 12-15 donut holes.
  6. Place the lid on the slow cooker and set to LOW heat. Cook for 40-45 minutes. Do not open the lid during the first 30 minutes. Check for doneness with a toothpick; it should come out clean.
  7. While the donuts cook, mix the coating sugar and cinnamon in a large bowl.
  8. Once cooked, carefully remove the donut holes and toss them in the cinnamon sugar mixture until fully coated. Serve warm.

Notes

Do not open the lid during the first 30 minutes of cooking to maintain steam. If the donuts are gummy, they need more time. If dry, they were overcooked. Serve warm for best texture. Can be stored in an airtight container at room temperature for up to two days. For gluten-free, use a 1:1 gluten-free flour blend. For vegan, use flax eggs and coconut oil.
