  • 810 fresh figs (ripe but firm, stems trimmed and quartered)
  • 4 ounces goat cheese (softened to room temperature)
  • 1 medium baguette (sliced into ½-inch thick rounds)
  • 23 tablespoons honey (high-quality, runny)
  • 1 tablespoon fresh thyme leaves (plus extra for garnish)
  • 2 tablespoons extra-virgin olive oil
  • Flaky sea salt (a pinch, like Maldon)
  • Balsamic glaze (optional, for drizzling)

Instructions

  1. Preheat your oven to 375°F (190°C). Arrange baguette slices in a single layer on a baking sheet.
  2. Brush each slice with olive oil on both sides.
  3. Toast the bread for 6-8 minutes until golden brown and edges are crispy.
  4. While the bread toasts, rinse figs gently, pat dry, trim stems, and quarter each fig lengthwise.
  5. Soften goat cheese at room temperature for 10 minutes.
  6. Remove toasted bread from oven and let cool for about 2 minutes.
  7. Spread each crostini with about 1 teaspoon of goat cheese in a thin, even layer.
  8. Top with 2-3 fig quarters, pressing gently into the cheese.
  9. Drizzle with honey (about ½ teaspoon per crostini).
  10. Sprinkle fresh thyme leaves and a pinch of flaky sea salt on top.
  11. Serve immediately.

Notes

Best served immediately. For best results, use room temperature goat cheese and slice figs just before serving. Can be made gluten-free with gluten-free bread or dairy-free with plant-based cheese. For a vegan version, substitute honey with maple syrup or agave nectar.
