Perfect Peach Bellini Popsicles

A refreshing and easy homemade champagne popsicle recipe that captures the sweet, bubbly essence of summer with ripe peaches and sparkling wine.

  • 3 medium fresh ripe peaches, peeled and chopped (about 2 cups / 300 g)
  • 1 cup (240 ml) champagne or sparkling wine (brut or extra dry preferred)
  • 2 tablespoons honey
  • 1 tablespoon fresh lemon juice
  • 1/4 cup (60 ml) water
  • Optional: 1 tablespoon peach schnapps

Instructions

  1. Peel and chop about 3 medium ripe peaches into chunks (roughly 2 cups / 300 g). Remove fibrous parts if you want a smooth popsicle.
  2. In a blender, combine the chopped peaches, 2 tablespoons honey, 1 tablespoon fresh lemon juice, and 1/4 cup (60 ml) water. Blend until smooth but still a bit thick, about 30 seconds.
  3. Pour the peach puree into a bowl and chill in the refrigerator for 10-15 minutes.
  4. Slowly whisk in 1 cup (240 ml) chilled champagne or sparkling wine gently to keep bubbles. Add 1 tablespoon peach schnapps if using.
  5. Carefully fill popsicle molds with the mixture, leaving space at the top. Insert sticks.
  6. Freeze molds for at least 6 hours or overnight. Avoid opening freezer frequently.
  7. To unmold, run warm water on the outside of molds for 10-15 seconds and gently remove popsicles.

Notes

Use chilled champagne and chill the peach puree before folding in champagne to keep bubbles lively. For a kid-friendly version, substitute champagne with sparkling grape juice or soda water. To avoid icy texture, do not rush freezing and consider stirring halfway through freezing. If no popsicle molds are available, use small paper cups with wooden sticks inserted once partially frozen.
