This easy peach crisp features a double-streusel method for a crunchy, buttery topping and a caramelized bottom crust. It’s the perfect summer dessert that comes together in minutes and disappears fast.

  • 6 cups fresh peaches, peeled and sliced (about 67 medium peaches)
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt
  • 1 cup all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 2/3 cup packed brown sugar
  • 1/2 cup chopped pecans
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted and slightly cooled

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the peaches: If peeling, blanch in boiling water for 30 seconds, then slip off skins. Slice into 1/2-inch thick wedges.
  3. Make the filling: In a large bowl, gently toss peach slices with sugar, cornstarch, lemon juice, cinnamon, nutmeg, and salt. Let sit for 5 minutes.
  4. Make the oat pecan streusel: In a medium bowl, whisk together flour, oats, brown sugar, chopped pecans, cinnamon, and salt. Pour melted butter over dry ingredients and stir with a fork until moistened and clumpy.
  5. Layer the crisp: Press half of the streusel mixture firmly into the bottom of an ungreased 8×8-inch baking dish. Pour peach mixture evenly over the top. Sprinkle remaining streusel over peaches, breaking up large clumps.
  6. Bake: Place dish on a baking sheet. Bake for 40-45 minutes, until filling is bubbly and topping is golden brown. If browning too fast, tent with foil for last 10 minutes.
  7. Cool: Let crisp cool on a wire rack for at least 20 minutes before serving.

Notes

For a crunchier topping, use cold butter cut into cubes instead of melted. Toast pecans at 350°F for 5 minutes before adding to streusel. Let crisp cool at least 20 minutes to allow juices to thicken.
