  • 4 slices thinly sliced prosciutto (preferably Genoa)
  • 810 fresh sage leaves, washed and patted dry
  • 4 tablespoons (about 60 g) unsalted butter
  • 1 tablespoon extra virgin olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon freshly squeezed lemon juice (optional)

Instructions

  1. Place each chicken breast between two pieces of parchment paper. Gently pound with a meat mallet or rolling pin until about ½ inch (1.3 cm) thick. Season both sides lightly with salt and pepper.
  2. Lay two slices of prosciutto flat on a cutting board, slightly overlapping. Place one pounded chicken breast on top, then tuck fresh sage leaves onto the breast. Wrap the prosciutto tightly around the chicken, covering it completely. Repeat with the second breast.
  3. Preheat the oven to 375°F (190°C).
  4. Heat 1 tablespoon olive oil in a heavy skillet over medium-high heat. Add the wrapped chicken breasts seam-side down and cook for 2-3 minutes until the prosciutto is crisp and golden. Flip and sear the other side for 2 minutes. Use tongs gently to avoid tearing the prosciutto.
  5. Transfer the skillet or move the chicken to a baking sheet. Bake for 12-15 minutes until the internal temperature reaches 165°F (74°C). Let chicken rest for 5 minutes after baking.
  6. While the chicken bakes, melt 4 tablespoons unsalted butter in a small skillet over medium heat. Swirl occasionally until the butter foams and turns golden brown with a nutty aroma (about 4-5 minutes). Add fresh sage leaves and cook for 30 seconds until crisp but not burnt. Remove from heat and stir in 1 teaspoon fresh lemon juice.
  7. Plate the rested chicken breasts and drizzle generously with the sage brown butter sauce.

Notes

If prosciutto crisps too fast during searing, lower the heat to avoid burning. Do not skip resting the chicken after baking to keep it juicy. Use a meat thermometer to ensure internal temperature reaches 165°F (74°C). For dairy-free option, substitute butter with vegan butter or herb-infused olive oil. Fresh sage is preferred over dried for best flavor.
