A quick and easy copycat recipe for a pumpkin spice cold foam iced coffee that tastes better than the coffee shop version, made with simple ingredients and a homemade pumpkin spice syrup.

  • 1/2 cup (100 g) granulated sugar
  • 2 tablespoons (30 g) pumpkin puree
  • 1 1/2 teaspoons pumpkin pie spice
  • 1 teaspoon (5 ml) vanilla extract
  • Pinch of salt
  • 1/3 cup (80 ml) cold half-and-half
  • 1 tablespoon (15 ml) vanilla syrup
  • Pinch of salt
  • Small pinch of pumpkin pie spice (for garnish)
  • 1 cup (240 ml) strong brewed coffee or cold brew concentrate
  • Ice cubes
  • 1/4 cup (60 ml) milk of choice (optional)
  • 23 tablespoons (3045 ml) prepared pumpkin spice syrup

Instructions

  1. In a small saucepan, combine 1/2 cup water, 1/2 cup granulated sugar, and 2 tablespoons pumpkin puree. Whisk until the sugar dissolves and the pumpkin is fully incorporated.
  2. Place the saucepan over medium heat. Bring the mixture to a gentle simmer, stirring occasionally. Do not let it boil hard.
  3. Once simmering, remove from heat. Stir in 1 1/2 teaspoons pumpkin pie spice, 1 teaspoon vanilla extract, and a pinch of salt.
  4. Let the syrup cool for about 10 minutes. Optionally, pour through a fine-mesh strainer into a jar or bottle. Store in the refrigerator for up to 2 weeks.
  5. In a glass jar with a tight-fitting lid, combine 1/3 cup cold half-and-half, 1 tablespoon vanilla syrup, and a pinch of salt.
  6. Screw the lid on tightly. Shake vigorously for about 45-60 seconds until thick and pourable.
  7. Fill a tall glass with ice cubes.
  8. Pour 1 cup of strong brewed coffee or cold brew concentrate over the ice.
  9. Add 1/4 cup of milk if desired.
  10. Stir in 2-3 tablespoons of the pumpkin spice syrup, to taste.
  11. Spoon the cold foam over the top of the coffee.
  12. Sprinkle a tiny pinch of pumpkin pie spice on top for garnish. Serve immediately with a straw.

Notes

For the best cold foam, use cold half-and-half and shake vigorously for a full 60 seconds. The syrup can be made ahead and stored in the refrigerator for up to 2 weeks. For a dairy-free version, use full-fat oat milk or coconut cream for the cold foam.
