  • 6 medium-sized firm apples (Granny Smith or Braeburn), peeled, cored, and halved
  • 4 tbsp (about 55g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 1/4 cups (160g) all-purpose flour
  • 34 tbsp (45-60ml) cold water
  • A pinch of salt
  • Optional: 1 tsp vanilla extract or a pinch of cinnamon

Instructions

  1. Make the Pastry Dough (15 minutes + chilling): In a large bowl, mix 1 1/4 cups (160g) flour with a pinch of salt. Cut in 4 tbsp (55g) softened unsalted butter using your fingers or a pastry cutter until the mixture resembles coarse crumbs. Add 3 tablespoons (45ml) cold water gradually, mixing until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
  2. Prepare the Apples (10 minutes): While dough chills, peel, core, and halve 6 apples. Set aside.
  3. Caramelize the Sugar (10 minutes): Heat 1 cup (200g) granulated sugar in your oven-safe skillet over medium heat. Stir gently with a wooden spoon as it melts and turns a deep amber color. When ready, swirl in 2 tbsp (30g) butter for richness. Remove from heat.
  4. Arrange Apples (5 minutes): Place the apple halves cut-side up tightly in the caramel in the skillet.
  5. Cook Apples on Stove (10 minutes): Return skillet to medium heat and cook apples gently in caramel for about 10 minutes, spooning caramel over tops to coat.
  6. Roll Out Dough (5 minutes): On a floured surface, roll out chilled dough to a 10-inch (25 cm) circle.
  7. Assemble and Bake (30-35 minutes): Carefully lay the dough over the apples in the skillet, tucking edges down around the fruit. Bake in a preheated oven at 375°F (190°C) for 30-35 minutes until crust is golden and crisp.
  8. Invert and Serve (10 minutes): Remove skillet from oven and let it cool for 5 minutes. Place a serving plate over the skillet and carefully invert the tart in one smooth motion. Serve warm or at room temperature.

Notes

If crust edges brown too fast, cover loosely with foil halfway through baking. Stir caramel slowly and patiently to avoid crystallization. Let tart cool slightly before inverting to prevent caramel spills. For gluten-free, substitute flour with almond or oat flour; for dairy-free, replace butter with coconut oil.
