  • 2 ½ cups (315g) all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon fine sea salt
  • ¾ cup (170g) unsalted butter, softened
  • 1 ½ cups (300g) granulated sugar
  • 3 large eggs, room temperature
  • 1 tablespoon pure vanilla extract
  • ½ teaspoon almond extract (optional)
  • 1 cup (240ml) buttermilk, room temperature
  • ½ cup (120g) sour cream, room temperature
  • 1 cup (226g) unsalted butter, softened (for buttercream)
  • 4 cups (480g) powdered sugar, sifted
  • 23 tablespoons heavy cream or milk
  • 1 ½ teaspoons pure vanilla extract
  • Pinch of salt
  • Green food coloring gel (or 1-2 teaspoons matcha powder)
  • Fresh sage leaves (for decoration, optional)
  • Edible flowers (for decoration, optional)
  • Gold sprinkles (for decoration, optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans, line bottoms with parchment paper, and grease parchment.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a stand mixer with paddle attachment, beat butter and sugar on medium speed until light and fluffy, about 3-4 minutes. Scrape bowl halfway through.
  4. Add eggs one at a time, beating well after each. Add vanilla and almond extract; beat until combined.
  5. With mixer on low, add one-third of flour mixture, mixing until just combined. Add half of buttermilk and sour cream; mix. Repeat with another third of flour, remaining buttermilk, and final third of flour. Do not overmix.
  6. Divide batter evenly between prepared pans (about 550g each). Smooth tops. Bake 28-32 minutes until a toothpick inserted in center comes out clean or with moist crumbs.
  7. Cool cakes in pans for 10 minutes, then invert onto wire rack. Remove parchment and cool completely (at least 2 hours).
  8. For buttercream: Beat softened butter on medium speed for 2-3 minutes until smooth and pale. Gradually add sifted powdered sugar, one cup at a time, on low speed. Add vanilla, salt, and 2 tablespoons cream. Beat on medium-high for 3-4 minutes until light and fluffy. Add more cream if needed.
  9. Add a tiny dab of green food coloring (or 1-2 teaspoons matcha powder) and mix until desired sage green color is reached.
  10. Place one cake layer on serving plate. Spread about ¾ cup buttercream on top. Place second layer upside down on top. Apply thin crumb coat; refrigerate 15 minutes. Apply final thicker layer of buttercream.
  11. Decorate with piped rosettes, fresh sage leaves, edible flowers, and gold sprinkles as desired.

Notes

Room temperature ingredients are crucial for best texture. Do not overmix batter. Cool cakes completely before frosting. For sage green color, add food coloring gradually. Cake tastes even better on day two. Store at room temperature for up to 2 days or refrigerate. Unfrosted layers can be frozen for up to 3 months.
