  • 3 medium ripe bananas, mashed
  • 1 ½ cups rolled oats
  • 1 cup whole wheat flour
  • ½ cup small-curd cottage cheese, well-drained
  • 2 large eggs, room temperature
  • ¼ cup honey or maple syrup
  • 1 cup frozen or fresh blueberries
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon (optional)
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ½ cup almond milk or milk of choice

Instructions

  1. Preheat your oven to 375°F (190°C) and grease your muffin tin or line it with paper liners.
  2. In a large bowl, combine rolled oats, whole wheat flour, baking powder, baking soda, cinnamon, and salt. Whisk to distribute evenly.
  3. In another bowl, mash the bananas until mostly smooth. Add cottage cheese, eggs, honey or maple syrup, vanilla extract, and almond milk. Mix until creamy and well combined.
  4. Pour the wet mixture into the dry ingredients and gently fold together using a spatula until just combined. Do not overmix.
  5. Carefully fold in the blueberries, ensuring they are evenly distributed without bursting.
  6. Spoon the batter evenly into 12 muffin cups, filling each about ¾ full.
  7. Bake for 20-25 minutes, checking at 20 minutes with a toothpick. Muffins are done when toothpick comes out clean or with a few moist crumbs.
  8. Let muffins cool in the tin for 5 minutes, then transfer to a cooling rack to cool completely.

Notes

Do not overmix the batter to keep muffins tender. Use ripe bananas for natural sweetness. Fold blueberries gently to avoid bursting. If muffins brown too fast, tent with foil halfway through baking. Batter can rest 5 minutes before baking to hydrate oats. Dry ingredients can be mixed the night before.
