This quick leftover turkey pot pie with puff pastry lid transforms leftover turkey into a cozy, flaky, and creamy weeknight dinner in under 40 minutes. It’s forgiving, uses simple ingredients, and is a guaranteed crowd-pleaser.

  • 2 cups leftover turkey, chopped or shredded
  • 1 cup frozen mixed vegetables (peas, carrots, corn, green beans)
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup low-sodium chicken broth
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1 sheet frozen puff pastry, thawed
  • 1 large egg, beaten with 1 tablespoon water

Instructions

  1. Preheat oven to 400°F (200°C). Place a baking sheet on the middle rack to heat up.
  2. On a lightly floured surface, gently roll out the thawed puff pastry sheet to smooth creases. Cut it into a shape slightly larger than your baking dish (about 1 inch overhang). Refrigerate while making the filling.
  3. Heat 1 tablespoon butter or olive oil in a large skillet over medium heat. Add diced onion and cook 3-4 minutes until soft and translucent. Add minced garlic and cook 30 seconds until fragrant.
  4. Add frozen mixed vegetables to the skillet. Cook 2-3 minutes, stirring occasionally, until thawed and starting to soften.
  5. Stir in chopped turkey, cream of mushroom soup, chicken broth, dried thyme, salt, and pepper. Simmer 2-3 minutes until thick and creamy. Taste and adjust seasoning.
  6. Pour the hot filling into a 9-inch pie dish or 2-quart baking dish, spreading evenly.
  7. Remove puff pastry from fridge and lay it over the filling. Press edges gently against the rim. Cut 3-4 small slits in the top for steam to escape.
  8. Brush the beaten egg mixture all over the pastry, including edges.
  9. Place dish on the preheated baking sheet. Bake 20-25 minutes until puff pastry is puffed and deep golden brown, and filling is bubbling around edges.
  10. Let rest 5-10 minutes before serving to allow filling to set.

Notes

Don’t skip the egg wash—it gives the pastry a beautiful golden color. Make sure the filling is thick before adding the pastry to prevent sogginess. Let the pot pie rest after baking for cleaner servings. For best results, use a hot filling and cold puff pastry.
