  • 3 tablespoons pure maple syrup
  • 2 tablespoons olive oil
  • ½ teaspoon kosher salt (or ¼ teaspoon table salt)
  • ¼ teaspoon freshly ground black pepper
  • ½ teaspoon cinnamon (optional)
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Position the rack in the middle of the oven.
  2. Line a baking sheet with parchment paper.
  3. Wash the squash thoroughly, pat dry, trim off both ends, cut in half crosswise, then slice into ½-inch thick rings. Remove seeds with fingers or a small spoon.
  4. In a small bowl, whisk together maple syrup, olive oil, salt, pepper, and cinnamon (if using). Add red pepper flakes if desired.
  5. Arrange squash rings in a single layer on the prepared baking sheet. Generously brush the maple glaze over both sides of each ring.
  6. Roast for 15-18 minutes, flipping halfway through (after 10 minutes). Squash is done when tender and edges are golden brown.
  7. Optional: Broil for the last 1-2 minutes for extra caramelization, watching carefully to prevent burning.
  8. Let rest for 2 minutes before serving. Transfer to a platter, drizzle with any remaining glaze, and sprinkle with flaky sea salt if desired. Serve warm.

For thinner rings (½ inch), add 2-3 minutes. Don’t crowd the pan to ensure caramelization. Squash can be sliced up to 24 hours in advance and stored in the refrigerator. Leftovers keep in an airtight container in the fridge for up to 4 days; reheat in a 375°F oven for 5-7 minutes or in an air fryer at 350°F for 3-4 minutes.
