A fast, easy, and fluffy scrambled eggs recipe made in the microwave, perfect for busy mornings, dorm rooms, or small kitchens with minimal cleanup.

Ingredients

Scale
  • 2 large eggs (room temperature preferred)
  • 2 tablespoons whole milk or milk of choice
  • A pinch of salt
  • A pinch of freshly ground black pepper (optional)
  • ½ teaspoon butter or oil (optional)
  • 2 tablespoons shredded cheddar or mozzarella cheese (optional)
  • Chopped fresh herbs like chives or parsley (optional)
  • Optional add-ins: diced tomatoes, spinach, cooked bacon bits

Instructions

  1. Crack 2 large eggs into a microwave-safe mug.
  2. Add 2 tablespoons (30 ml) of milk, a pinch of salt, and freshly ground pepper if using.
  3. Whisk vigorously with a fork until the mixture is uniform and slightly frothy.
  4. Fold in any optional ingredients like cheese, herbs, or veggies gently.
  5. If using, add ½ teaspoon butter to the mug and swirl to coat the inside.
  6. Microwave on high for 30 seconds.
  7. Carefully remove the mug and stir the eggs to break up cooked lumps.
  8. Microwave again for 20-30 seconds, then check consistency.
  9. If eggs are still slightly wet on top, stir gently and microwave for an additional 10-15 seconds.
  10. Give a final gentle stir, adjust seasoning if needed, and serve immediately.

Notes

Cook eggs in short bursts and stir midway to avoid rubbery texture. Use a larger mug to prevent overflow. Milk adds creaminess and fluffiness but can be substituted with water or dairy-free milk. Reheat leftovers gently with a splash of milk to keep moist.
