Instructions

  1. Preheat your oven to 400°F (200°C). Line a sheet pan with parchment paper or aluminum foil.
  2. In a small bowl, combine the melted butter, minced garlic, lemon zest, lemon juice, salt, and pepper. Whisk until well combined. Add red pepper flakes if using.
  3. Pat the salmon fillets dry with paper towels. Place them on the prepared sheet pan, skin-side down if using skin-on fillets, leaving space between each piece.
  4. Spoon the lemon garlic butter mixture evenly over each fillet, including the sides. Pour any remaining butter around the salmon on the pan.
  5. Roast for 12-15 minutes, depending on thickness. For 1-inch thick fillets, start checking at 12 minutes. The salmon should be opaque and flake easily with a fork, with an internal temperature of 125°F-130°F (52°C-54°C) for medium.
  6. Let the salmon rest for 2-3 minutes to allow juices to redistribute.
