  • 1 cup fresh blueberries, washed and picked over for stems
  • 1520 fresh mint leaves, plus extra for garnish
  • ½ cup freshly squeezed lime juice (about 45 limes)
  • ½ cup granulated sugar (organic cane sugar preferred)
  • 1 ½ cups white rum (e.g., Bacardi or Havana Club)
  • 2 cups chilled soda water
  • Ice cubes, enough to fill a large pitcher
  • Lime slices for garnish (optional)

Instructions

  1. Rinse the blueberries and mint leaves thoroughly. Cut limes in half and juice until you have about ½ cup. Set aside lime slices for garnish.
  2. Place blueberries and mint leaves into the bottom of a large pitcher. Gently muddle with a muddler to release juice and oils without pulverizing.
  3. Add granulated sugar and freshly squeezed lime juice. Stir well until sugar dissolves completely.
  4. Pour in the white rum and stir gently to combine.
  5. Fill the pitcher with ice cubes, enough to keep it cold but not dilute the flavor too quickly. Stir gently.
  6. Just before serving, add chilled soda water to the pitcher and stir lightly to keep the fizz.
  7. Garnish with lime slices and mint sprigs. Serve immediately with straws.

Notes

Do not over-muddle to avoid bitterness and puree texture. Use fresh lime juice for best flavor. Add soda water last to maintain fizz. For non-alcoholic version, omit rum and add extra soda water or lemon-lime soda. Leftovers can be stored refrigerated without soda and ice for up to 24 hours; add soda and ice before serving.
