This refreshing frozen peach lemonade slushie with mint is a quick and easy 4-ingredient drink that tastes like summer in a glass. Made with frozen peaches, fresh lemon juice, honey, and mint, it’s the perfect cooldown for hot days.

  • 3 cups (about 450g) frozen peach slices or chunks
  • 1/3 cup (about 80ml) freshly squeezed lemon juice
  • 2 to 3 tablespoons (30-45ml) honey, or to taste
  • 1/4 cup (about 1012 large leaves) fresh mint leaves, plus extra for garnish
  • 1/2 cup (120ml) cold water
  • 1/2 cup (about 80g) ice cubes (optional)

Instructions

  1. Prep your ingredients. Squeeze the lemons until you have 1/3 cup of fresh juice. Pick the mint leaves off the stems—you want about 1/4 cup of leaves, packed loosely. Give them a quick rinse and pat them dry. Measure out your frozen peaches. If they’re clumped together, break them apart with your hands or let them sit for a minute.
  2. Add ingredients to the blender. Start with the frozen peaches. Then add the fresh lemon juice, honey, mint leaves, and cold water. If you’re using ice cubes, add them now.
  3. Blend on low speed. Start your blender on low and gradually increase to high. This prevents the blades from getting stuck. If your blender has a ‘pulse’ function, use it a few times to break up the peaches before going full speed.
  4. Scrape down the sides. Stop the blender after about 30 seconds. Use a spatula to scrape down any unblended chunks stuck to the sides.
  5. Blend again until smooth. Continue blending on high for another 30 to 60 seconds. You’re looking for a thick, pourable consistency with no large chunks of peach. If it’s too thick, add cold water one tablespoon at a time until it reaches the desired consistency. If it’s too thin, add a few more frozen peaches or a handful of ice.
  6. Taste and adjust. Take a small spoonful and taste it. Is it sweet enough? Add a little more honey. Is it too tart? A pinch of sugar or another drizzle of honey will balance it.
  7. Serve immediately. Pour the slushie into glasses. Garnish each glass with a fresh mint sprig and a thin lemon slice. For an extra pretty touch, rub a lemon wedge around the rim of the glass and dip it in a little sugar before pouring.

Notes

Let frozen peaches sit at room temperature for 5 minutes if using a standard blender. Don’t over-blend to avoid melting. Chill glasses in the freezer for 10 minutes before serving for extra frostiness. Strip mint leaves from stems to avoid bitterness.
