A quick and easy summer cocktail blending fresh strawberries, lemon juice, vodka, and crushed ice into a smooth, icy slush that’s perfect for backyard gatherings and hot days.

Ingredients

Scale
  • 2 cups fresh strawberries, hulled and halved
  • Juice of 2 large lemons (about 1/4 cup or 60 ml)
  • 1 cup vodka (240 ml)
  • 3/4 cup simple syrup (180 ml)
  • 3 cups crushed ice (720 ml)
  • 1/4 cup water (60 ml)
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Rinse and hull about 2 cups of fresh strawberries. Juice 2 large lemons to get approximately 1/4 cup (60 ml) of lemon juice. Set aside.
  2. Make the simple syrup if homemade: combine equal parts sugar and water (about 3/4 cup each) in a small saucepan over medium heat. Stir until sugar dissolves completely, then cool before using.
  3. In a blender, combine the strawberries, fresh lemon juice, vodka, simple syrup, and water. Blend on medium speed until mixture is smooth and uniform.
  4. Add about 3 cups of crushed ice to the blender. Pulse in short bursts until the slush reaches your desired consistency. Avoid over-blending to prevent melting the ice.
  5. Pour the slush into chilled glasses. Garnish with fresh mint leaves or a strawberry slice on the rim. Serve immediately for best texture.

Notes

If the slush is too thick, add a splash more water or vodka. If too thin, add more ice and pulse again. Use fresh ingredients for best flavor and color. Chill glasses before serving to keep the slush from melting quickly. For a non-alcoholic version, replace vodka with sparkling water or lemon-lime soda.
