A vibrant and refreshing summer snack combining juicy watermelon, salty feta, fresh mint, and a subtle jalapeño kick, perfect for gatherings and quick preparation.

Ingredients

  • 4 cups seedless watermelon, cut into 1-inch cubes (about 600g)
  • 1 cup firm feta cheese, crumbled or cut into small cubes (about 150g)
  • Fresh mint leaves, whole, washed and patted dry
  • 1 medium jalapeño, thinly sliced, seeds removed for less heat if preferred
  • 1 tablespoon extra virgin olive oil
  • Juice of 1 lime (about 2 tablespoons or 30 ml)
  • Pinch of sea salt
  • Freshly ground black pepper, optional

Instructions

  1. Cut about 4 cups (600g) of seedless watermelon into 1-inch cubes. Keep them uniform for even skewering and place in a mixing bowl.
  2. Drizzle 1 tablespoon of extra virgin olive oil and the juice of one lime (about 2 tablespoons) over the watermelon. Gently toss to coat, then sprinkle a pinch of sea salt and a light grind of black pepper. Let rest for 5 minutes to absorb flavors.
  3. Thinly slice one medium jalapeño pepper, removing seeds if less heat is desired. Set aside.
  4. Crumble or cut 1 cup (150g) of firm feta cheese into bite-sized cubes.
  5. Assemble skewers by threading a watermelon cube, a folded fresh mint leaf, a feta cube, and a jalapeño slice. Repeat the pattern until the skewer is full (3-4 sets per skewer).
  6. Arrange skewers on a platter and drizzle a little more olive oil if desired. Optionally sprinkle chopped mint on top. Serve immediately or refrigerate up to 1 hour before serving.

Notes

Pat watermelon cubes dry if very juicy to avoid soggy skewers. Do not overcrowd skewers for easier eating and better presentation. Serve within 1-2 hours for best freshness. For dairy-free, substitute feta with marinated tofu. Remove jalapeño seeds for less heat or replace with sweet mini peppers for kid-friendly version.
