Ingredients

Scale
  • 6 cups mixed apples, peeled, cored, and sliced (Granny Smith and Honeycrisp recommended)
  • 1/2 cup salted caramel sauce (store-bought or homemade)
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon freshly grated nutmeg
  • 1 tablespoon lemon juice
  • 3/4 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour (or almond flour for gluten-free)
  • 1/2 cup light brown sugar, packed
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, cold and cut into cubes (or coconut oil for vegan)
  • Vanilla ice cream for serving

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Peel, core, and slice 6 cups of mixed apples into roughly 1/4-inch thick slices. Toss with 1 tablespoon lemon juice.
  3. Add 1/2 cup salted caramel sauce, 2 tablespoons granulated sugar, 1 teaspoon cinnamon, and 1/4 teaspoon nutmeg to the apples. Stir gently to coat evenly.
  4. Pour the caramel-coated apples into a 9×9-inch baking dish, spreading evenly.
  5. In a medium bowl, combine 3/4 cup rolled oats, 1/2 cup flour, 1/2 cup packed brown sugar, 1/2 teaspoon salt, and 1/2 teaspoon cinnamon.
  6. Add 1/2 cup cold unsalted butter cubes to the dry ingredients. Use a pastry cutter or two forks to cut the butter into the mixture until it resembles coarse crumbs with some pea-sized bits.
  7. Evenly sprinkle the oat mixture over the apples.
  8. Bake for 40-45 minutes until the topping is golden brown and the filling bubbles at the edges. Check after 35 minutes to avoid burning.
  9. Let the crisp rest for 10 minutes before serving.
  10. Serve warm with a generous scoop of vanilla ice cream.
