  • 1/3 cup mayonnaise (Duke’s or Hellmann’s preferred)
  • 1 tablespoon yellow mustard (or Dijon for sharper kick)
  • 1 teaspoon white vinegar
  • 1/4 teaspoon salt (plus more for boiling water)
  • 1/4 teaspoon black pepper (freshly ground preferred)
  • 1/4 teaspoon paprika (plus extra for garnish; smoked paprika works)
  • 1 can (6 oz) large black olives (pitted, whole)
  • 1/4 cup cream cheese (softened)
  • Optional: Sriracha or hot sauce (a few dashes for spicy kick)

Instructions

  1. Boil the Eggs: Place 12 eggs in a single layer in a medium saucepan. Cover with cold water by about 1 inch. Add a generous pinch of salt. Bring to a rolling boil over high heat, then cover, turn off heat, and let sit for exactly 12 minutes. Meanwhile, prepare a large bowl of ice water. Transfer eggs to ice bath using a slotted spoon and chill for at least 10 minutes.
  2. Peel and Halve the Eggs: Gently tap each egg on the counter to crack shell all over, then roll between palms to loosen. Start peeling from the wider end. Rinse peeled eggs under cool water and pat dry. Slice each egg in half lengthwise. Pop out yolks into a medium mixing bowl. Arrange white halves on serving platter, cut-side up.
  3. Make the Filling: Add mayonnaise, yellow mustard, white vinegar, salt, pepper, and paprika to the bowl with yolks. Mash together with a fork until smooth and creamy. Taste and adjust seasoning. If desired, add a few dashes of sriracha for heat. Filling should be thick enough to hold shape but soft enough to pipe. If too stiff, add another teaspoon of mayo; if too runny, chill for 10 minutes.
  4. Prepare the Olive Spiders: Drain can of black olives and pat dry. You’ll need 12 whole olives for spider bodies and 24 olive halves for legs. To make legs: cut 12 olives in half lengthwise, then cut each half into thin strips (about 4 leg strips per half, 8 legs per spider). For spider bodies: take remaining 12 whole olives and cut a small slit on one side for leg attachment. Set aside.
  5. Fill the Egg Whites: Spoon yolk mixture into a piping bag fitted with a star tip, or into a zip-top bag with a corner snipped off. Pipe filling into each egg white half, mounding slightly above the edge. Alternatively, use a small spoon and butter knife to fill.
  6. Assemble the Spiders: Dab a tiny bit of cream cheese on the bottom of each spider body (whole olive). Place one body on top of each filled egg, pressing gently. Insert 4 olive leg strips into each side of the slit in the body, fanning them out slightly. Sprinkle a tiny pinch of paprika over eggs for color if desired.
  7. Chill and Serve: Cover platter loosely with plastic wrap and refrigerate for at least 30 minutes before serving. These can be made up to 24 hours ahead—add spider legs just before serving to prevent sogginess.

Notes

Use eggs that are at least a week old for easier peeling. For fresh eggs, add 1 teaspoon baking soda to boiling water. Let filling rest in fridge for 10-15 minutes before piping for better texture. Cut olive legs about 1/8 inch thick to prevent breaking. Arrange on a dark platter for best visual contrast. Store assembled deviled eggs in an airtight container in the fridge for up to 2 days; do not freeze.
