  • ½ teaspoon salt
  • 1 ½ cups semi-sweet chocolate chips, divided
  • ½ cup heavy cream
  • 1 cup semi-sweet chocolate chips or chopped chocolate bars
  • 1 tablespoon unsalted butter (optional)
  • ¼ cup white chocolate chips or melting wafers
  • 1 teaspoon coconut oil or vegetable shortening

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven. If using a cast iron skillet, place it in the oven while it preheats. If using a cake pan, set it aside.
  2. In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together on medium speed for 3-4 minutes until light and fluffy. Scrape down the sides halfway through.
  3. Add the eggs one at a time, beating well after each addition. Then add the vanilla extract and beat until combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Do not overmix.
  6. Reserve ¼ cup of chocolate chips for the top. Fold the remaining 1 ¼ cups into the dough using a rubber spatula.
  7. If using a cast iron skillet, carefully remove it from the oven and spray lightly with non-stick spray. Transfer the dough to the skillet or prepared cake pan. Using slightly damp fingers, press the dough into an even layer. Press the reserved chocolate chips into the top.
  8. Bake for 20-25 minutes for a 10-inch pan. The edges should be golden brown and the center should look slightly underdone. A toothpick inserted in the center should come out with a few moist crumbs.
  9. Place the pan on a cooling rack and let the cookie cake cool for at least 30 minutes in the pan. Then carefully transfer it to the rack to cool completely.
  10. While the cookie cools, place the chocolate chips for the ganache in a heat-safe bowl. Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer. Pour the hot cream over the chocolate chips. Let it sit for 2-3 minutes, then gently whisk until smooth and glossy. Stir in the butter if using. Let the ganache cool for 5-10 minutes until it thickens slightly but is still pourable.
  11. Place the cooled cookie cake on your serving plate. Pour the ganache into the center and use a spatula to spread it evenly to the edges, letting it drip over the sides.
  12. Melt the white chocolate chips with the coconut oil in the microwave in 20-second bursts, stirring between each, until smooth.
