  • 1 tsp vanilla extract
  • 1/2 cup (90g) chocolate chips or chunks (optional)
  • Pinch of salt

Instructions

  1. Preheat your oven to 325°F (163°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. Melt the butter in a microwave-safe bowl in 30-second bursts until fully melted but not browned (about 1 minute). Let it cool slightly.
  3. In a mixing bowl, whisk together the melted butter, eggs, and vanilla extract until just combined.
  4. Add the brownie mix, espresso powder, sour cream (or yogurt), and a pinch of salt. Stir gently with a spatula until just combined; the batter will be thick and glossy.
  5. Fold in the chocolate chips or chunks if using.
  6. Pour the batter into the prepared pan and smooth the top evenly. Tap the pan gently on the counter to release air bubbles.
  7. Bake for 28–32 minutes. Start checking at 28 minutes by inserting a toothpick near the center; it should come out with a few moist crumbs but no wet batter.
  8. Cool completely in the pan on a wire rack. Use the parchment overhang to lift brownies out for easy slicing.
