  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream
  • 1 box (about 12 ounces) vanilla wafers
  • 2 cups fresh strawberries, hulled and sliced
  • 1 1/2 cups fresh blueberries
  • Optional: 1 tablespoon lemon zest
  • Extra whipped cream for topping
  • Fresh berries for garnish
  • Optional: Blue food coloring

Instructions

  1. Soften the cream cheese by letting it sit at room temperature for 30 minutes.
  2. In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and fluffy, about 2 minutes. Scrape down the sides.
  3. Add the powdered sugar and vanilla extract, then beat until combined and creamy.
  4. In a separate bowl, pour in the cold heavy cream. Whip on medium-high speed until soft peaks form, about 3-4 minutes.
  5. Gently fold the whipped cream into the cream cheese mixture using a spatula until light and creamy.
  6. Wash and slice the strawberries into 1/4-inch thick pieces. Rinse and pat dry the blueberries.
  7. Spread a thin layer (about 1/2 cup) of the cream mixture on the bottom of a 9×13-inch baking dish.
  8. Arrange a single snug layer of vanilla wafers over the cream.
  9. Sprinkle about 1/3 of the sliced strawberries and 1/3 of the blueberries evenly over the cookies.
  10. Spread about 1/3 of the remaining cream mixture over the berries.
  11. Repeat layers: another layer of vanilla wafers, another third of the berries, and another third of the cream.
  12. Repeat one more time, ending with a final layer of cream on top.
  13. Cover the dish with plastic wrap or foil and refrigerate for at least 6 hours, preferably overnight.
  14. Before serving, spread reserved whipped cream on top and garnish with fresh berries in a decorative pattern.
  15. Slice and serve cold, using a sharp knife wiped clean between cuts.

Notes

Make sure cream cheese is truly softened to avoid lumps. Fresh berries are best; frozen berries release too much liquid. Chill overnight for best texture. Use a serrated knife for clean slices. Keep cake chilled until serving.
