  • 1 cup (200g) granulated sugar
  • ¼ cup (25g) unsweetened cocoa powder (Dutch-processed recommended)
  • 1 teaspoon baking soda

  • ½ cup (120ml) vegetable oil
  • ½ cup (120ml) buttermilk
  • 2 large eggs, room temperature
  • 1 teaspoon white vinegar
  • 1 teaspoon vanilla extract
  • 1–2 teaspoons black gel food coloring
  • For the frosting: ½ cup (1 stick) unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2–3 tablespoons milk
  • Pinch of salt
  • Optional: drop of black food coloring for gray effect

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin pan with cupcake liners.
  2. In a medium bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.
  3. In a larger bowl, whisk together vegetable oil, buttermilk, eggs, vinegar, and vanilla extract until smooth.
  4. Add black gel food coloring to the wet ingredients (start with 1 teaspoon, add more for deeper color) and whisk until combined.
  5. Gradually add dry ingredients to wet ingredients, mixing gently with a spatula just until combined (about 15-20 strokes). Do not overmix.
  6. Divide batter evenly among the 12 liners, filling each about ⅔ full.
  7. Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Let cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  9. While cupcakes cool, make frosting: Beat softened butter until creamy. Gradually add powdered sugar, then vanilla and milk, beating until light and fluffy. Add a drop of black food coloring if desired.
  10. Frost cooled cupcakes using a piping bag or knife. Decorate with Halloween sprinkles or other toppings as desired.

Notes

Use gel food coloring, not liquid drops, for best color. Don’t overmix batter. Cupcakes will darken as they cool. For gluten-free, use a 1:1 gluten-free flour blend. For vegan, use flax eggs and plant-based milk with lemon juice. Store unfrosted cupcakes at room temperature for up to 3 days; frosted cupcakes refrigerate if not eaten within 24 hours. Freeze unfrosted for up to 3 months.
